Winemaker Notes:
The 2007 vintage is sourced entirely from the vineyard of the late Frank Ferreira. His obsession for minimalist vineyard practices and dry farming consistently resulted in low yielding vines that produced fruit of exceptional varietal character. This fruit provides a wonderful match for our winemaking philosophies, amplifying the terroir of this site.
Tasting Notes:
Cabernet Franc often suffers criticism for being overly herbaceous, but the slow ripening that occurs in the Applegate seems to eliminate green notes. This bottling posseses exciting aromas of cinnamon, violet and beefsteak, and a sublimely rich mouthfeel that is a signature of our wines. With over two years of age, this wine is certainly capable of current enjoyment, but will continue to develop in the bottle over the next 10 to 15 years.
Aging:
Racked to barrel day after pressing. Aged in 1 large, 98 gal., new French Oak barrel, and one 3 year old French Oak barrel. Lees stirred regularly throughout the first quarter. Barrel aged 18 mos, bottled unfined and unfiltered, aged in bottle 6 mos. before release.
